Beet the Heat with Kuhn Rikon

Bowl of BeetsI’ve been buying certified organic beets at Seattle’s University District Farmers Market for many years now. I learned pretty quickly that my Kuhn Rikon pressure cooker is the easiest most efficient tool for cooking the hard earthy orbs.

The new pressure cookers are very safe, so this has become a foolproof operation in my house. I simply remove the nutritious greens and leave the remaining stem and skin intact. I give them a quick wash, put a couple inches of water into my pressure cooker, lock on the lid and bring the whole thing up to pressure. In about 15 to 20 minutes, depending on the size, my beets are ready. The skins slip off. The texture is like butter.

My cooked farmers market beets are then ready to be sliced and tossed into salads or the skillet during the busy work week ahead.
