curry lentilEven though I am constantly cooking, there are times when I need something quick, healthy and fortifying just for me. At lunch, I sometimes reach for The Spice Hunter Meal in a Cup Curry Lentil Soup.

Made with dehydrated lentils, veggies and spices, this all natural vegetarian soup cooks up in a flash and is like traditional Indian curry because it features cumin, coriander, and ginger. I often buy these tidy containers at PCC and keep them stashed in my pantry. They are so easy to fix on a cold rainy day!

I simply shake the container, peel back the lid, add boiling water, replace the lid and let steep for 7 minutes. To brighten the flavors, I pour the soup into a large bowl and add chopped fresh coriander. Lunch is served, and each serving boasts a whopping 10 grams of fiber.

I also like these soups because they make a great alternative to a purchased lunch if there is a staff microwave available at the office. The soups can be purchased, stashed in a desk, and retrieved when necessary. To microwave, you simply shake the package, add water to the fill line and microwave on high for 1 1/2 minutes. It then stands for 6 minutes, covered.

Each soup sells for less than $3, but they can often be found for considerably less when offered on sale. For example, The Spice Hunter website is currently offering them for $1.65 each. If that isn’t a convenient and affordable working lunch option, then I don’t know what is!
